Château Haut-Brion Pessac Léognan 1989This wine has a handsome color deep and mature. The nose finds that the perfect maturity of the fruit is dominating the tasting. One even finds the softness of the wine in the nose. In the mouth the subtleties of the aromas evolve bit by bit. The ripe tannins make up a taut and fleshy base. Nevertheless all is harmoniously melded together. One notes the scent of cigar, cedar wood, an unusually exotic touch of vanilla, cloves and orange peel, ending with a strong whiff of truffle. All these evolve together and give a sensation of silky unctuosity. This is a legendary bottle. Drink: 2005 - 2030.
Beringer Private Reserve Cabernet Sauvignon 1994This vintage was a dream year for Cabernet here in Napa Valley and shows what makes this winegrowing area so special. Our 1994 Cabernet combines intensity of flavor with tannins firm enough to promise long aging. The wine's sweet, ripe black currant and black fruit base brought an already-developed maturity to the wine, and I've watched these flavors evolve and intermingle with the toast and vanilla notes from the oak as I waited for the moment I considered this wine ripe for release. I believe I'll be watching this wine's personality develop and unfold for decades.

Pine Ridge Napa Valley Cabernet Sauvignon 2005ORIGIN: This distinctive Bordeaux style blend is complemented by the "Rutherford Dust" characteristics of this historic Napa Valley appellation. The style is created to broaden and fi ne tune the palate as well as extend the finish. Our Rutherford Cabernet Sauvignon, produced since the inception of Pine Ridge in 1978, refl ects the attention to detail afforded our entire portfolio of fine wines. The 2005 vintage is a blend of Cabernet Sauvignon and Merlot from our estate vineyards. WINEMAKING: This vintage we continued our extensive cluster and berry sorting practices prior to light crushing. A long season and rich maturity of tannins allowed for an extended maceration of 24 to 30 days. This contact with the skins develops the expansive mouthfeel and tannin structure of the wine. Aged in new, one, and two-vintage-old French oak barrels for 15 months, this wine was unfi ned and was bottled in April of 2007. TASTING NOTES: A nose of briar, blackberry and blueberry is marked by mixed aromas of coffee, tobacco and vanilla. Elegant in structure and balance, this medium to full-bodied Cabernet is teeming with cherry, blackberry and tobacco flavors, with fi rm, cloaking tannins giving way to an extended finish of berries and toast. This wine may be enjoyed now or cellared for ten years.
Far Niente Cabernet Sauvignon 1993The 1993 Far Niente Estate Cabernet Sauvignon has rich and deep berry flavors complemented by toasty oak aromas as well as the typical "dusty" components traditionally found among the finest soils of the western vineyards of Oakville. The vintage has produced a wonderful extra dimension of depth and intensity with unusual grace. The blending has helped produce a wine that is soft and mouth filling now, while further bottle aging will reward your patience with a longer and more velvety texture.
Opus One Napa Valley Red 1994Summer was cooler than average, extending the growing season and the 'hang time' of the grapes. The wines are long-lived and profound.
Opus One Napa Valley Red 1996A decreased berry set in May followed by sunny days and warm July nights brought the smaller-than-average crop of 1996 to maturity in mid-September. Showing deep color, the wines are bold and concentrated, with supple texture, lush flavors, and a smooth, lingering finish.
Spring Mountain Vineyard Cabernet Sauvignon 1994The wine has a very bright ruby red color with scarlet tones and medium depth. The high intensity aroma is very fragrant yet complex: black cherry fruit combined with cassis and toasty oak. The wine displays a round, medium full entry with soft tannins. Evolution is rich yet velvety. Finish is medium length, with aromatics carrying through on the palate.
Spring Mountain Vineyard Cabernet Sauvignon 1995Dark to very dark ruby. Medium intense, concentrated dark plum and blackberry aromas with touches of mint and anise. Concentrated, forward, rich, ripe, dark plum and cassis flavors on the palate with a great texture and medium tannins. This wine is showing particularly well now. A true gem.

The 1995 vintage is ready to drink now but would also benefit from a few more years in the bottle.

The wine should be stored in a fresh, dry and dark place, without temperature variations, and the bottle must remain up-right. As a natural product, the Port Wine is subject to create deposit when ageing. To guarantee the plenitude of its freshness and quality, the wine shall be consumed preferentially with the shortest time in bottle. Slightly refreshed, expresses all the finesse and sophistication when combined with caramel desserts, dried fruits and spices, like caramel fondant with apple and ginger jelly, tatin tart, burnt cream and chesses of minimum intensity. Despite the age, the freshness remains. Extraordinary marriage with a refreshing tangerine parfait. The multiplicity of possible harmonies is amazing, having the consumer the pleasure to go in search of new flavours. Serve at a temperature between 12 and 14 degrees C.
Dominus Napa Valley Red 1996The 1996 growing season was nearly perfect, one where everything seems easy. Of course, the team at Dominus was leery about this, and concentrated on their work in the vineyard even more than usual, in order to get the best quality grapes. Their efforts were rewarded; the wine is beautifully complex and well balanced.
