The grapes are manually harvested, placed into plastic cases, strictly sorted out and destemmed. During alcoholic fermentation, the must is punched down, but not pumped over. Vatting lasts for 15 to 20 days. After a light settling, the wine is racked into oak barrels for ageing for 12 to 18 months. Food Match: Veal, Soft cheeses, roasts, red meat, pheasant, Hard cheeses, fowl, duck, beef.
