It has a beautiful, dense palate, delicate and lively, and is notable for its balance and full body, punctuated by a long, fruity finish. It is the perfect accompaniment to fish soups, carpaccios and all varieties of grilled fish, but will also add sparkle to red berry desserts.

Villa Wolf Pinot Noir Rosé 2018The Pfalz (aka ‘Palatinate’) region is in the Rhine river valley in southwest Germany, directly north of France’s Alsace region. The low-lying Haardt mountains protect the area from cold, wet Atlantic weather, making it one of the warmer and drier areas of Germany. Wine grapes do quite well here where it is possible to achieve full ripeness in every vintage. The predominant soil type in this area is well-drained, weathered sandstone. It produces wines with a fruit-driven purity and a stony structure. The Villa Wolf Pinot Noir Rosé is made with fruit from vineyards farmed expressly for the purpose of producing a rosé. Only perfectly ripe , healthy grapes are selected. Upon harvest the fruit is given a brief maceration (four to six hours) to extract a lovely salmon color from the Pinot Noir grapes. The resulting wine is light and refreshing, with deliciously bright fruit flavors and a clean, zippy finish.

Vinification and aging Harvested separately during the night when temperatures are coolest, the grapes are then de-stemmed and pressed. After fermentation they are aged in stainless steel vats. Tasting Its rosy appearance is soft as a dream, and an expressive, gourmet nose lends charm to this blend dominated by wild berries: gooseberry and raspberry reveal themselves in a crisp, silky palate enhanced with an elegant touch of minerality. Ideal as an aperitif, to accompany tapas, but also goes well with all varieties of grilled fish, beef or fish tartar and fresh berry desserts.

Of course the Domaine de Val d'Arenc lends itself perfectly. He then reveals its freshness and vivacity. Her dress is adorned with a translucent and shiny salmon. Chateau Puech Haut occupies 170 hectares including 100 hectares of vines in Saint-Drézéry, a small village 15 km northeast of Montpellier, in the foothills of the Cevennes and belongs to the AOC Coteause du Langedoc. In Provence, a 'Puech' means a small hill (or mountain), a 'Puech Haut' is a hill higher than the others. This position, 'on a hill higher than the others', is conducive to exceptional drainage for the vineyards. The clay and limestone soil is composed of boulders brought by the Rhone in the Quaternary and its plots reside on hillsides protected from excessive temperatures by the nearby Mediterranean Sea and winds including the Mistral, the north wine pervasive in the region.
