Maison Bouchard Père & Fils has invested in a modern cuverie enabling the vinification of more than 100 different crus. From the vine to bottle, the process is handled with meticulous care, to ensure the most faithful expression of each terroir. Installed since the beginning of the 19th century on the site of the ancient Château de Beaune, Maison Bouchard Père & Fils uses the underground galleries and bastions of this fortress built by Luis XI, 10 meters below ground, for the slow maturing of its wines under optimal conditions. Millions of bottles, including a rare collection of prephylloxera wines rest in the cellars today protected by 7 meter thick walls.

Domaine des Perdrix Vosne Romanée 2014Garnet colour with purple tints. The nose is discret at a first glance offering dark fruits notes, ashes and undergrowth. On the palate, the structure is firm and integrated. Tannins play their lovely game. We catch back on the dark fruits perfumes. Powerful and long aftertaste. Joseph Drouhin Charmes Chambertin 2016A generous and distinctive wine, often superb. The colour is intense and bright. On the nose, the first impression that arises is that of cherry. Then, woody and fine spicy aromas appear, with an elegant hint of musk in some vintages. The flavours are extraordinary in their richness and harmony, neither too rough nor too heavy. The architecture of the wine is held up by fine and noble tannins, giving the body a silky texture (called "gras"). Acidity brings energy and liveliness to the whole. The aftertaste is a pure delight.

Joseph Drouhin Chambolle Musigny 2016The wines of Chambolle have always been highly prized for their finesse and elegance. The color is lovely. Aromas are very complex and evoke violet, cherries and humus, with blackberry and noble tannins coating the palate. Extremely well balanced, the wine has a very persistent, rounded finish. With age, the aromas turn to mushroom and underbrush, while conserving all their finesse. Chambolle-Musigny should be served with delicately prepared dishes, such as "Canard aux cerises" (duck cooked with cherries) or "Boeuf aux morilles" (beef with morels). The cheeses should be ripe but not too strong.

Joseph Drouhin Gevrey Chambertin 2016Gevrey-Chambertin is a wine with a beautiful, bright ruby colour. Intensely fruity on the nose, the aromas are reminiscent of black cherry, wild blackberry and liquorice. The woody character is subtle and marries delicately with the other aromas. As the wine evolves, there are more complex notes, such as mild spice, nutmeg and leather. Later still, mushroom and damp earth nuances make their appearance. Although present on the palate, tannin is never astringent but blends itself harmoniously with the natural freshness and "gras" (velvety texture) of the wine. The same aromas encountered earlier on the nose are found again in the aftertaste.
