Dibón Brut Reserve
Aspect: Brilliant appearance with constant release of fine bubbles forming a crown on the surface of the glass. Pale straw yellow in colour. Aroma: Intense. Tertiary aromas of fresh baking arise from the second fermentation in the bottle, giving it a character of its own. Taste: Smooth and silky, its carbonic release gives it freshness and vivacity, resulting in a long finish. Food Pairings: Rice fish, Mixed rice, Capon and Poularde, Quail and partridge, Rabbit and hare, Crustaceans, Cured meats, Sirloin, Sirloin Steak, Ham, Molluscan shell, Duck, Whitefish, Fish with sauce, Roast chicken.
The non-vintage Cava Dibon Brut Reserve (lot 111409) is based on the classic Cava grape varieties with a secondary fermentation after 16 months in bottle. It has a simple bouquet that has pleasant, light floral aromas. The palate has a crisp citric entry with touches of Clementine and grapefruit with fine delineation towards the fresh, apple-y finish. Light apple aromas are elegant and not over the top, while the tangerine and orange flavors are lean and focused. This is a light-framed Cava with a clean, fast, tasty profile and finish. Not yeasty or heavy at all.
